Serving Suggestions

Not only is this fiesta chicken incredibly simple to make, but it is also so versatile- you can serve it up in countless ways for easy, flavorful meals all week long.

  • Nachos: Pile over tortilla chips and top with shredded cheese, guacamole, nonfat Greek yogurt or sour cream, and jalapeños- this is my favorite way to enjoy shredded fiesta chicken!
  • Burritos: Wrap in a whole grain tortilla with brown rice, avocado, and fresh greens.
  • Rice Bowls: Serve over a bed of brown rice or cauliflower rice with a dollop of Greek yogurt for extra protein.

Nutrition Spotlight

This dish is packed with nutrient-dense ingredients:

  • Chicken breast: A lean protein source that supports muscle health and keeps you satisfied.
  • Black beans: Rich in fiber and plant-based protein, great for gut health and blood sugar balance.
  • Corn: A whole grain that provides antioxidants like lutein for eye health and fiber for a healthy gut.
