This Fiesta Crockpot Chicken is bursting with zesty salsa, hearty black beans, sweet corn, and tender shredded chicken. It’s a wholesome, flavor-packed dish perfect for nachos, burritos, or rice bowls—and it’s ideal for meal prep to keep healthy, delicious meals ready all week.

Ingredients
  

  • 4 chicken breast, boneless, skinless
  • 1, 15 oz can black beans, rinsed and drained
  • 1, 10 oz bag frozen corn
  • 1.5 cup mild salsa
  • 2 tsp ground cumin
  • 2 tsp garlic salt

Instructions
 

  • Season the chicken breast with cumin and garlic salt and place in the bottom of your crockpot.
  • Add the salsa, corn and black beans on top.
  • Cover and cook on low for 6 hours.
  • Remove the chicken from crockpot and shred with two forks. Place it back in the crockpot and stir. Cook on low for an additional 30 minutes.
