Golden Raisin and Goat Cheese Salad With Maple-Balsamic Vinaigrette

Light, fresh, and full of flavor, this Goat Cheese and Golden Raisin Salad with Maple-Balsamic Vinaigrette is a perfect summer meal. Sweet raisins, creamy goat cheese, and crisp greens come together for a healthy, satisfying lunch or dinner.

Ingredients
  

For The Salad

  • 4 cups mixed salad greens
  • 2 chicken breasts or chicken tenderloins (4 - 6 oz each)
  • 2 oz goat cheese, crumbled
  • 2 Tbsp golden raisins
  • 2 Tbsp chopped walnuts or pecans

For The Dressing

  • 1 Tbsp extra virgin olive oil
  • 2 Tbsp white balsamic vinegar
  • 2 Tbsp maple syrup
  • 1 tsp Dijon mustard
  • salt and pepper to taste

Instructions
 

  • In a large bowl, toss the salad greens with golden raisins and nuts.
  • In a small jar, whisk together the oil, vinegar, syrup, and mustard. Season with salt and pepper.
  • Drizzle the dressing over the greens and toss gently to coat.
  • Top with sliced chicken and crumbled goat cheese.
  • Serve immediately and enjoy or if you're packing it for lunch, store the dressing separately and toss just before eating keep the greens fresh.
