Cilantro Lime Rice

A fresh and flavorful side dish made with brown rice cooked in chicken bone broth, then tossed with fresh cilantro, citrus juice, garlic salt, and black pepper. This easy cilantro lime rice is the perfect accompaniment to tacos, burrito bowls, grilled meats, and more.

Ingredients
  

  • 1 cup uncooked brown rice
  • 2 cups chicken bone broth
  • juice of 1 lime
  • 1 tsp garlic salt
  • 1/4 tsp ground black pepper

Instructions
 

  • Add the rice and chicken bone broth to a medium saucepan and bring to a boil over medium heat.
  • Reduce heat to low, cover, and simmer according to package directions, about 40 minute or until the liquid isa absorbed and the rice is tender.
  • Remove from heat and allow to cool for about 10 minutes. Fluff with a fork and stir in the lime juice, cilantro, garlic salt and ground black pepper.
  • Taste and adjust seasoning as needed.
